In my family we haven’t always eaten as healthy as we should.  In today’s world you can get a pizza for five dollars.  The population can eat anything they want in five to ten minutes for fairly cheap.  The problem is that quick cheap food is heavy with fat, salt and sugar.  It’s no wonder the USA has an obesity epidemic.

As a family we are trying to do better.  We have been changing things up in our diet.  With the picky kids in my house that I have to feed it isn’t easy.   We often try the hide the healthy stuff.  If its not something that they’ll  eat out right.  We have been able to healthify some of my kids not so healthy favorites.

So with these methods of cooking.  Easy healthy recipes that actually taste good are now in the realm of possibilities for our regular menus.  Now we can eat to live and not live to eat.

1. Mac N Cheese . The first one is a favorite of many that is turned into a plate full of nutrition that tastes delicious, and importantly it is as good as its classic counterpart. but does have fewer calories and less fat. The secret ingredient of this lighter Mac and Cheese is pureed winter squash.

Heat the oven to 375°F. With a cooking spray, lightly spray the baking pan. Suggested pan size is nine by thirteen inches. Boil a large pot of water, put the macaroni, and cook for about five to eight minutes.

Check if it is tender and firm and drain it to a large bowl. in another pan, cook together with low heat the frozen squash and milk. Stir occasionally to defrost the squash and mix the two. Increase the heat from low to medium heat and wait until the mixture is almost simmering and bubbles are seen on it. Turn off the heat, remove the pan, and stir in all the other cheese mixtures you choose like ricotta cheese, jack cheese and cheddar cheese. Add the following: salt, mustard, and pepper.

Combine this mixture with the macaroni. Sprinkle combined breadcrumbs, parmesan cheese, and oil on top. Bake for twenty minutes and broil for three minutes.

You will produce a healthy but tasty alternative to a buttery cheesy comfort food.

My kids are not the best with bread crumbs so we use crushed cheese crackers.  This method is so  easy to tweak and make it your own.  Enjoy
